Everyone loves tacos. Having a good, easy, healthy recipe for tacos is very important. This is a taco recipe that uses lentils in place of ground meat.
And, speaking of lentils…I love lentils! I love them so much that if I wasn’t married to Nate I would marry them. They’re so easy to make, and they’re a great substitute for ground meat in recipes. Plus they’re cheaper than ground meat. Win, win. :)
Lentils are easy to prepare, because they don’t require soaking. They’re also more nutrient dense than ground beef, containing vitamins, minerals, protein and fiber while containing less fat and fewer calories. Win, win, win, win, win, win. :)
Enough about lentils, just give us the freaking recipe!
OK, here they are, Lentil Tacos.
1 16 oz. package of dry lentils (I prefer brown lentils because they hold their shape. If you’re shopping in a rural area, this is likely the only option you will have)
1 medium onion, chopped
1 Tbsp. olive oil
1 Tbsp. chili powder
1 Tbsp. garlic powder
2 tsp. cumin
1 ½ cup salsa (make sure to grab the salsa with the lowest sodium)
Step 1-Cook lentils according to package directions. Drain off any excess water.
Step 2-Brown onion in olive oil in a big ol’ skillet.
Step 3-Add cooked lentils to the skillet, along with the rest of the ingredients and stir until well combined.
Use this however you normally use taco meat. It makes a BUNCH, so you could half it if you want to.
